RECEPT: Vijgen-dadelcake

RECIPE: Fig and date cake

This cake is delicious with coffee or tea! And best of all: it is deliciously sweet without any refined sugars added! (Do pay attention to the ingredients list of the dried fruit, because sometimes sugar is added..)


What do you need:

  • 140 g flour of your choice (I use spelt flour)
  • 2 bananas
  • 4 dates (pitted)
  • 120 g figs
  • 1 teaspoon baking powder
  • Cinnamon (to taste)
  • 3 tablespoons (vegetable) oil
  • Nuts of your choice (I use pecans)

Preparation method:

  1. Preheat the oven to 180°C.
  2. Mix the flour, baking powder and cinnamon in a bowl.
  3. Chop the dates and figs coarsely and soak them in boiled water for a few minutes (drain).
  4. Mash the bananas and mix them with the soaked dates and figs together with the oil.
  5. Grease a baking tin and pour the batter into it. Then sprinkle the nuts over it.
  6. Place the cake in the oven for 45 minutes. Check if the cake is done by inserting a skewer. If it comes out clean, the cake is done.
  7. Let the cake cool before serving. Enjoy!
