
RECIPE: Fig and date cake
This cake is delicious with coffee or tea! And best of all: it is deliciously sweet without any refined sugars added! (Do pay attention to the ingredients list of the dried fruit, because sometimes sugar is added..)
What do you need:
- 140 g flour of your choice (I use spelt flour)
- 2 bananas
- 4 dates (pitted)
- 120 g figs
- 1 teaspoon baking powder
- Cinnamon (to taste)
- 3 tablespoons (vegetable) oil
- Nuts of your choice (I use pecans)
Preparation method:
- Preheat the oven to 180°C.
- Mix the flour, baking powder and cinnamon in a bowl.
- Chop the dates and figs coarsely and soak them in boiled water for a few minutes (drain).
- Mash the bananas and mix them with the soaked dates and figs together with the oil.
- Grease a baking tin and pour the batter into it. Then sprinkle the nuts over it.
- Place the cake in the oven for 45 minutes. Check if the cake is done by inserting a skewer. If it comes out clean, the cake is done.
- Let the cake cool before serving. Enjoy!
