RECIPE: Mushroom burgers

Mushrooms contain valuable nutrients including folic acid, vitamin B2, and minerals such as potassium, phosphorus, copper, zinc and manganese, and they also contain fiber.

Although mushrooms cannot be used as a full-fledged meat substitute, partly because of their relatively low protein and iron content, they do contribute to a healthy and varied diet. This recipe for mushroom burgers is a delicious addition to dinner or lunch!


What do you need

For about 3 burgers

  • ±250 gr. mushrooms of your choice
  • 1 clove of garlic
  • 1 onion
  • 1 egg
  • 1 tablespoon pine nuts
  • 1 tablespoon tomato puree
  • Breadcrumbs (to make the burgers firmer)
  • Oil for frying
  • Herbs to taste: thyme, parsley, salt and pepper
  • Optional: Parmesan cheese

Preparation method:

  1. Finely chop the onion, garlic and mushrooms.
  2. Roast the pine nuts over low heat until golden brown and set aside.
  3. Heat some oil in a pan and fry the onion until translucent. Then add the garlic and fry briefly.
  4. Add the mushrooms and herbs to the pan and fry until golden brown.
  5. Stir the tomato puree into the mixture and fry briefly.
  6. Remove the pan from the heat, let the mixture cool slightly, then transfer it to a food processor.
  7. Add the toasted pine nuts, egg, breadcrumbs and, if desired, Parmesan cheese to the food processor.
  8. Mix the whole thing in the food processor. If you want to keep texture in the burgers, mix it briefly; if not, mix it a bit longer.
  9. Use a spoon to take a little of the mixture and form into burgers.
  10. Heat some oil in a pan and fry the burgers on both sides until golden brown.
  11. Serve the burgers on a bun with some lettuce if desired. Enjoy!
